Just beet it, beeeeeettttttt it. I feel like beets are an often overlooked vegetable. Maybe it’s because they’re a root vegetable and some people think they taste like dirt, or because when you peel and slice a beet to roast it your hands end up looking like you committed murder or some other heinous crime. Well today we can avoid that potential criminal investigation because I’m sharing a recipe for juicing them!

My biggest tip for juicing beets is to ensure that they are a little old. I know that sounds contradictory to us nutritionists always preaching to eat fresh vegetables but it softens them a bit and I find this works best for my juicer. If you don’t have access to fresh beets or have the time to let them ripen, the brand Love Beets sells some that are already cooked, just make sure you get the plain ones, some of those flavors I can only imagine would go a little awry in a juice!

Not only is this recipe great for convenience to getting in those vegetables but it’s an awesome substitute for you or the person in your life who loves to drink juice. Store bought juices come in two varieties the kind loaded with sugars, flavors, and concentrates to keep them shelf stable and those ‘fresh’ juices that were made weeks, probably even months ago that claim to be fresh.  A fresh juice should be consumed within 24-48 tops after it’s production. The reason for this is all the nutrients in the food have been broken down and will start to degrade in quality as time goes on.

  • 5 beets
  • 1 apple
  • ½ lemon
  • 2 bunches swiss chard
  • 1 inch ginger
